This is an older Weight Watchers recipe with some modifications for my family’s needs. My toddler is allergic to eggs, so I’ve had to make several adjustments, just in case he decides to eat what Mommy is eating. I love this recipe because it’s simple to prepare, freeze, then bake at a later time.
With my ingredients and portions, this recipe has a PointsPlus value of 5 per serving, and makes 6 servings.
Here’s what you will need:
1 tsp. Garlic Salt
1 tsp. Italian Seasoning
1 lb. Extra Lean Ground Beef (raw) – though you could use ground turkey for even less points or sausage for more flavor)
1 cup tomato sauce
15 reduced fat crackers (I used the Keebler Club ones), crushed
1 Tbsp. Fat Free Sour Cream (this is in place of ONE egg/ 1/2 cup egg beaters)
1 cup shredded mozzarella cheese
Mix ground beef, sour cream, seasonings, crackers and half of the tomato sauce (I like to do this in the food processor, rather than squishing the meat together with my hands). Press half the mixture into a loaf pan. Top with cheese. Layer the remaining meat mixture over the cheese. Top with the remaining sauce. Bake at 350* for about 50 minutes.
