Italian Chicken Bake

This recipe is modified from the back of the Heart Smart Bisquick box. The look and taste are like a chicken pizza. It is a recipe for two, so you would need to adjust it for your family size.

1/3 cup Heart Smart Bisquick (though I would guess any such baking mix would suffice)
2 Tbsp. Sour cream (2 eggs if you don’t have a child with an allergy)
1 Tbsp. Water
1/8 tsp. garlic powder
1/2 cup diced, cooked chicken breast (I used two fillets)
1/2 cup diced tomatoes (I use the Italian stewed variety for extra flavor)
1/4 tsp. Italian seasoning (I also add more garlic, because we LOVE garlic)
1/4 cup Mozzarella cheese (if you haven’t tried it, I recommend the Kraft with Philadelphia cream cheese variety – it’s extra delicious and melty)

Stir together Bisquick, sour cream, water, and garlic. Spread the batter in a loaf pan greased with non-stick cooking spray. Mix chicken, tomatoes and seasoning. Spoon over the batter. Top with cheese. Bake at 400* for 20-23 minutes
