Aunt Cathe’s Enchilada Casserole

I can’t tell you which house they lived in at the time, all I can tell you is that enchilada casserole was delicious. The taste was seared in my memory. After my aunt passed away, I decided to make her casserole for the first time. The first time I made it, the velveeta didn’t go over well with my children. For the most part, they eat “real food”. Tonight, I used only real cheese and it was received much better. I hope you all enjoy as much as we do. Love and miss you aunt Cathe!

    Oh Angie, this post made me tear up:) Momma Cathe made this often for us kidos. I make it as well for my family. It is always on our monthly menu.
